Quelle est la différence entre le cidre brut et le cire doux? au niveau de la fabrication, comment se fait la différence?

Les 2 cidres n'ont pas le même goût
On distingue plusieurs grandes familles de cidres selon que l?on laisse, ou non, la fermentation aller à son terme, avant la mise en bouteilles :
- en dessous de 3°GL, on obtient un cidre doux encore assez sucré et au net goût de pomme, à consommer au dessert ;
- entre 3° et 5°, c?est le cidre demi-sec ou brut le plus répandu en France qui accompagne viande et poisson ;
- le cidre traditionnel plus acidulé et peu sucré titre généralement plus de 5°. Il s'agit du cidre que l'on trouve traditionnellement au Pays basque et dans les Asturies .
